I’m not knocking the idea of good value bikes indeed I think most bike and component manufacturers are taking the piss on prices.
I think you have to sell one hell of a dream when you are up against PX/Dolan/Pinnacle/Ribble/Decathlon/Genesis (?)/Vitus and higher spec Boardman. -

I'm not sure "being in stock" is a particularly great long term strategy. It may get you some sales this year, maybe next, but you'll something else for when shops are able to get Giant/Specialized back in stock over here.
That photo of your bike, is that the finished product? You not doing any paint or even decals? The tiny one on the side of the head tube doesn't count. We know all mass produced carbon bikes come out of Taiwan, but at the moment it looks very direct-from-china. I believe the biggest trick you're missing is not going for an alu frames.
Why would I want to go for that frameset over a Boardman ADV 8.9 that have full hydraulic brakes and Shimano components for only £1100?
Genuine question and the answer cannot be "cause it's carbon".

You’re selling a generic product that’s available cheaper direct from China (ie Kinlin Rims and Novatec hubs), relying on customers not wanting to source the individual parts themselves and wanting a UK warranty (which I think is very reasonable!) while carefully cutting some corners to actually create a profit margin (in the Hunt analogy, this is the cheap Pillar spokes and unbranded bearings, in your case it’s the Sensah groupset and cable discs)IMO the key reason Hunt have succeeded is because they went big on the slick marketing and priced themselves barely above what you could get build yourself.
