I've just bought a Pacer from exactly the same year (it's in the post) and have to admit I may unashamedly steal one or two ideas from this build ;)
I think we both had the same idea independently about the pink Gravel Kings however! Kinda want to try the purple/violet ones too.
Out of interest, what are the biggest tyres you think it can manage? Assuming 38s are fine but not sure if there's room after that?

Slick 38s are fine. There's probs clearance for 40-42mm at the fork to be honest, but the chainstays are pretty tight. I had some 35mm GravelKing SKs (the knobbly ones) on there for a while and, clearance at the chainstays was pretty minimal to be honest.
There's someone on instagram who claims to have got 42mm tyres in, but he's lying / has narrow rims / hasn't measured actual inflated width.
