If mini-V brakes won't fit you can run normal V-brakes using brake cable travel adapters. The wheelie cable stop thingies. Problem Solver versions are £25-30 each but I sourced some more affordable ones from eBay from Taiwan.

I’m planning on doing something similar with my 90s tourer.
Campag 10 shifter
Old Campag derailleur (pre 2000)
Shimano 10 sp cassette.
(I think I’ve got that right)There’s also an 8sp version using shimano derailleur and mech.
Bike is currently 8sp campag shifting over re-spaced shimano 8 cassette.

Nice! That should work perfectly.
For my setup, Campy 10 shifter plus Exact Actuation derailleur is 2.8mm x 1.3 = 3.64mm. Shimano cassettes have 3.95mm spacing, so that's about 0.3mm "error" between sprockets, or less than 3mm across the whole cassette. It works pretty much flawlessly.
Your setup should be even better. Campy 10 shifter plus old Campy derailleur is 2.8mm x 1.4 = 3.92mm, so it's almost exactly right for a Shimano cassette. Now you've got me thinking!

Useful numbers.
I’m changing it up to get lower gears mainly.
I have a 90s racing triple derailleur, I’m not sure how big a sprocket it will shift on to, I guess I can use one of those mech hanger extender doodads, capacity will be an issue too maybe - I’ll be changing the triple for a ‘sub compact double’ TA cyclotouriste 48/3? -

Do Campy do longer cages? I'm not sure how you get more capacity otherwise.

I also say Campag but when you think about it, given that in Italian, words scarcely end in consonants and the G isn't pronounced itself in Campagnolo, it does seem the lesser appropriate :)

Getting the bike ready for a Lands End - John o Groats trip at the end of next week. Slightly beefier seatpost clamp to withstand the weight of a bag, and to add a bit of colour. Pirelli P Zero's are a bit of a wild card. They inflate up to 29mm across on these rims, and are plenty comfortable, fingers crossed they survive the journey, and I can use them for the rest of summer.
Toying with the idea of installing a aero ti seatpost from ebay.
Bike is 8.1kg as it stands.

Parts bin Raleigh MTrax (WIP...)
Wanted to do a slightly upgraded resto. But forks weren’t up to it (yet). I welcome suggestions or ideas for what to do next...
White industries cranks, 1x7 with og LX mech and parts bin XT thumby, swapped in RC31 forks (og Pace suspension elastomers had gone - might refurb those), new headset, club roost stem (stiff as a board, but not very light) and og Ti bars with yeti grips, LX levers with the variable pull, Mavic 317 rim on XT hub up front with a newish BB7 brake
A productive afternoon off...
(Couldn’t find chain tool to sort that, so it’s straight out of the box length and slaps a bit)
Rides nicely and is lighter than most other things I have. Needs nippier tyres (suggestions welcome).

Me too for my gf, it's surprisingly difficult to find something that isn't a retro mtb. My old canti caadx now seems to now be semi rare if you're after a specific size.
