Images have EXIF metadata removed and are compressed if applicable, but no colour transformation or anything like that is applied.
It is far more likely that what you're seeing are apps that read the EXIF and see the photo is taken on an iPhone (whilst also being displayed on an Apple device) then add effects and saturation to make them look richer.
So nothing in the photo is removed, but full EXIF and dedicated apps may mean things are added which then makes it look different.
If someone has deep knowledge of image processors wishes to do a side by side compare, feel free.

@Velocio, how come my photos (posted from iPhone) are desaturated by the forum upload process? Hard to show, but this is the same photo, displayed on Instagram behind and once uploaded to the forum in front. It’s the same comparing images in the native photos app vs. uploaded to forum.
