On the 996 that's as simple as unplugging the heating elements, the E63 is significantly more sophisticated - the seats stuffed full of air-bags and sensors. I suspect the car would get upset if a bunch of safety critical items were not there when it looked for them.
If I'm correct and it's the lumbar support that is the issue then I can get the seat modified without upsetting the computers.
