I think shallow carbon rims look the best on these bikes, partially because they would likely have had anodised aluminium rims when new, so the profile and the look is very close, and of course carbon rims don't suffer from braking surface wear that results in the rim turning silver (which looks terrible in my opinion, other opinions are available).
Maximum that looks ok is probably 30mm deep as that was available in alloy in period.
