Pls dont use dosaa mix, its like me using ready pancake mix. IT IS PISS EASY if you have a good blender.
Basically soak urad daal and tiny bit of methi seeds, once soft enough, grind it (with its water) fine, mix with rice flour I go for 60/40 (60 urad daal, 40 rice flour), make a pancake-ish thick mix, leave it out for 8 hours or so for fermentation, make dosaa.
I make multiple fillings. Potato (obvs), Beans Maakhni (why not? I always have maakhni gravy in big ice cube tray in the freezer) and a coconut sweet potato curry that I use to dip the dosa.

I tried to use some 'instant dosa mix' which promised simplicity but it was terrible.
Tasty though - so it might have been a user error. The aloo masala I made was excellent though (this recipe).
