I'm assuming yes, but will an SLX or Deore cassette work OK with an otherwise GRX setup?

If they are both 11 speed, then yes.

GRX official only works with 11-40 and 11-42. Unofficially, you can go up to 46t

Ta. Yes both 11 speed, 11-40. I would normally Sunrace but none of those about whereas MTB stuff seems slightly more available.
