So probably best to stock up on BH90 cables to ensure compatibility across the 105/Tiagra levers.
I just saw UberBike have their own brand stuff, spec looks similar to BH90 with the 2.1mm internal diameter and it comes in a choice of colours, so orange and/or blue naturally pulls at the heart strings.
Also, just realised, now I've got a new fork, I'll need to undo the brake line as it's all internally routed. Two questions, is it best to disconnect at the lever or the caliper? And do all I need to do is use a new olive, no need to trim down and use a new insert?

It depends on the caliper, lever and routing, but as long as there is no bango on your caliper, then I imagine disconnecting and unbolting the caliper would be easier as you then won't have to remove the bar tape etc.
Unfortunately you can't just put a new olive on because it is crushed around the hose and barb. It may be possible to recover the barb but it is a lot of effort. Fortunately, you don't need a new olive. I've swapped loads of brakes without putting a new olive on, never had an issue with leaking.
Olives are the same, ID is different and barbs match that, you'll probably get away with either but bh90 is specced for the newer or better stuff.
