Would look at the slightly wider, disc specific and tubeless compatible Hydra.
DT Swiss 511 aren't wide but I ran 700x50 on this at Badlands and same goes for Kinlin XR31.
You can go wider but then you may have frame clearance issues (which bike?) and you can sometimes expose more sidewall.
