here's a practical set up, surly travelers check (bike couplings so can be put in a suitcase) with dingle so you can set the preferred gearing at the destination
I'm guessing he doesn't change it multiple times a day. more like, "wow, this part of Thailand is hilly, I'll select the lower ratio for the few days I'm here"
