Have you tried using an amp sim that's front loaded? Something like the UAD Apollo range or the that Iridium pedal where the latency is practically zero?
I'm no great shakes as a player but even I felt that the small amount of latency introduced by software amp sims made it difficult to sync in with the rhythm of what was being played. Even if they sound great, they feel spongey.
Latency was what I thought as well. I can’t record using the GarageBand amp sims because of the latency - instead I have to monitor the input guitar signal as I’m recording, and apply the amp models afterwards.
