Have you tried using an amp sim that's front loaded? Something like the UAD Apollo range or the that Iridium pedal where the latency is practically zero?
I'm no great shakes as a player but even I felt that the small amount of latency introduced by software amp sims made it difficult to sync in with the rhythm of what was being played. Even if they sound great, they feel spongey.

Tried to do a bit of off the cuff recording straight into Logic yesterday, man I just can’t get on with software amps. Dunno what it is about them but as soon as I’m plugged into an amp sim, any semblance of touch and dynamics in my playing disappears and I end up bashing the crap out of my guitar and losing all feel. Are any of them any good?
