what's really missing from this world is a jones bar (or bars in a similar vain) with di2 road shifters on the extension, then cross tops and MTB shifters on the in the normal MTB position, then you've got a road position and an off road position.

Points deducted from me for taking a meme seriously, but there is, much to my own annoyance, plenty of the latter on the East Coast/Appalachian side of the US. Though it's true that those of us who live here also have to deal with West Coasters designing gear and components as if moisture does not exist.

Its a Fargo, so a drop bar mtb. The advantage is in certain situations where a comfy dirt drop has advantages such as riding on rough roads for 12 hours into a headwind. Very popular on tour divide.

As @velosaurus said really. If you're riding non-technical terrain for hours on end, the ability to swap hand positions and get out of the wind a little trumps the superior ( imo ) handling* of a flat or riser bar
*I realise some people can ride technical stuff on drops, but they tend to be highly skilled and better yet when riding flats/risers

Fargo also sits between Gravel bikes and mountain bikes really. Much more capable in the rough stuff due to 29 x 2.4-2.8 tyres, slacker HA, rode mine on some pretty rough trails with ease where a gravel bike would have had me wimpering.
