I'm on 52/36 R8000 which shifts great. Is 1tooth more going to make it explode?

No, it's not.

I've used a 53/36 combination with absolutely no ill effect in t'Alps, and still run it with good effect to this day.

Dura-Ace 9070 standard cage with 53/36 Ultegra 6800 chainset/ rings.
