Toe overlap = comical crashes
I've got 3 bikes with toe overlap. I've crashed all of them, at least once. On exactly no occasions was this due to toe overlap.

I didn't always crash into things. Sometimes I crashed without other things being involved at all. Other than an excess of speed/enthusiasm over grip/skill. One of the crashes was due to a person lying on the velodrome banking in an inconvenient position though.

I just can't deal with my flared bars, can't find a benefit. Too low to off-road, too wide on road. Just need to decide between normal drops or find something more extremely shaped to see if it does something.

Agreed. Raced cross with toe overlap. Only crashes had nothing to do with toe overlap.
I did once manage to stick my foot into my rear wheel though.

Not sure he's really getting to the pro/con point in that video is he. The weight gain thing is a weak argument against 700C, it's only ~7% more than a 650B rim and tyre. 150g, 150ml of water in a bottle.
Structural concerns? Nah.
Geometry concerns maybe, if you're really after something that feels quite road-like or a shorter rider with some specific geometry wants. That mix of geometry and ride feel influence is the main decision maker I think. Gravel bikes do seem to be used around the tipping point between 'Road Plus' and light XC 29er.But not needing roll-over because you 'steer round bumps not ride over them'? What can I say.
