You'll struggle to get a nice edge (where your forearms rub all day). I'd go for birch ply.

Yes - that's true. Might not be possible to build sufficient finish on the cross section of the board. I could maybe put an edge of ply around it and rout a radius, but that's likely more effort than I want to go to.
