Just give them a quick strop on a steel as you work through your prep.
There's a reason those "quick knife sharpeners" on QVC work so well. If you give most knives a couple of strokes on anything it'll improve it.

Really need to sharpen my knives. Each and every one needs some time and attention. Not sure how I got through the Christmas prep with them being so blunt..
Only one more day of prep to go before I can figure out a couple of evenings to get to sharpening.

That's nice! I got my brother a non damascus version for Christmas a few years ago and he claims it's the best gift I've ever bought for him. It's something I definitely don't need but secretly covet.

Bought a kiwi brand cleaver a while ago and finally used it and found it blunt.
Now that is a disappointment.

A steel won’t sharpen the knife if it’s blunt. It just realigns the edge. So it is good discipline to use a steel frequently, but it won’t do much if the blade needs to be stone-sharpened.

Long time whittler, first time sharpener. Having never sharpened my knifes before, usually due to leaving them in the woods or similar, I've got one I really like, but it's a bit blunt. Do I just need a whet stone? A specific one, as there seems to be loads when I start googling it...

Do you have really fancy knives with super hard steel? If so a whetstone may be the way to go. Ice bear combo stone 1000/3-6000 is cheap and useful range for sharp knives that just need touching up so you can see the internal cellular structure of the carrot you’ve just dismembered.
For everything else that needs to be made slicey in a 5mins without soaking a Norton India combo stone will prob do (https://www.cromwell.co.uk/shop/abrasives/oilstones-and-whetstones/combination-india-stones-fine/f/69922?query=norton%20oilstones)Get the biggest stone you can as you can sharpen a small knife on a big stone but doing big kitchen jobbies on one meant for a pen knife is a pain in the hole.

Good advice from Jupiz for a first time sharpener. Get some practice on a knife you care less about before you do the ones you like. And flatten the stones periodically as they tend to dish through use and will stop sharpening properly. Wetstones are easier to flatten than oilstones, but they also dish more quickly.

I’ve got a couple of nice chef’s knives I’ve not used in a good few years. I’m guessing people don’t sell them through this forum so I’m after some advice on the best place to sell them.
One of them is a Kasumi Damascus slicer, and the other is a Hattori HD series Damascus steel 21cm chefs knife.

I bought this on a whim in the summer because i liked the look of the burl wood handle and the short blade. It's very solid and nicely balanced, and the damascus steel is very pretty. It came with a pretty rubbish machined edge on it that just wasn't the right angle given the width on the blade. Anyway, three hours on the stones (600,800,3000,8000,10000) and it has the edge it deserves.
