So, some parts are allready here, some are lost in transit, hopefully they will arrive soon,
Went for Thomson Seatpost + Thomson Stem (not arrived yet),
The tyres are Hutchinson Black Mamba CX in 38'
And also on the way is a 11 speed XT 11-40 k7, that i hope i can manage to use with the Shimano 105 long cage derailleur.
For now:
I think i have enough cleareance for some mud.
Now i'm strugling with the headset + handlebar + brakes... dont know what to use here...
Found a nice deal for some XT Vbrakes , but... i do prefer the look of the cantilever ...

Lovely!
V brakes won't work very well with (R7000)drop levers. Some lo-profile cantilevers will look right and work well IMO

TRP Revox if you can find them.
If not Avid Shorty Ulitimates or Shimano CX70s are good

I use classic Ritchey Logic canti's on my CX bike. It works but it's not discs. The problem is actually not the calipers but keeping the cables free from friction. One ride in the dirt and all breaking power has gone. Will try coated (and more expensive) cables. Hope it helps.

Are the Trekto 720cr any good?

What about Shimano CX50 ?
Wide cantilevers like those 720 CR are hard to get to generate any power

Me neither. I was planning to buy Tektros, but my local shop here in Finland had those in stock, 25 euros each maybe. I find it good that you can adjust the feel quite a lot with position of the hanger and the length of straddle cable. These two are actually the only cantis I've used, so can't comment on Avid etc. And on project itself: it's awesome!

I've found a friend with some Avid, don't know the model (yet), will see the price for that, and then decide the way to go.Mainly i'm missing saddle (would like a brook c17 all weather) but i don't think it will "match" the bike, handlebar - maybe ritchey baquiano as they are cheap and without that crazy flare, and headset (plus cables, cable housing, bar tape)

Just added this to the build.
Bontrager Montrose saddle - newnow missing is: handlebar, headset, brakes, bar tape, cables and housings.

Had some free time in my lunch break, and up we go to add some liquid to the wheels and check clearance.
Seems pretty good for me, i think if i went for a bigger size tyre, there would be no clearance in the front, so, very happy with it:
Bought a Ritchey Baquiano, and almost everything is on its way (some small parts missing only)

went in a different direction related to the brakes,
after some advices, i bought a set of mini v-brakes (quite cheap @ Decathtlon).
Also some parts arrived, and some are due to arrive today. -

So... after much mental work and finnancial work also, i decided to have go and buy this:
I will just use the frame, as the fork is not original (will be available to sell), add a Shimano 105 R7000 that i have found for a bargain.
Also a fork is on the way :)
