Did a few more bits - fitted the bottle cages, rear mech and cassette, and I am now done for the day.
This could potentially be on the road tomorrow.
The way the front rack is currently mounted (which I believe is correct), it is currently impossible to remove or replace the decaleur without raising the stem.
As this bike will be set up as a light tourer, I guess it would be normal for the stem to be somewhat raised in any case. I'll have a bit of a play tomorrow, but if I take it much higher, I'll have to re-cable the brakes, which is frustrating.
You won't have to recable the brakes, you have plenty of excess below the straddle, just undo the nut and give yourself more cable from hanger to straddle.
