My canti set-ups are from the 90s, so probably of little use to OP.
Sticking with components which were designed to be used together would be my best bet.So - Campag v2 ergos and SS knock-offs (Cane Creek SCR-5, Tektro RL200) and Campag CX Cantis/Tektro CR720.
Likewise, Sram S500 should be a good fit for shorty ultimates.

Recommending specific brake lever/canti combinations rather than making blanket statements would be much more useful IMO.
