Do you know if the newest Shimano 105 in 2x will work with the STI Triple shifters? I'm guessing no as my shifters are only 10 speed and will have to change not only the shifters but the derailleur as well.
The question really is if I can change from the triple I have to the front to a 2x setup? trying to minimise parts to swap.

You can have a 1x10 set up, by going for an MTB derailleur and wider range cassette even up to 11-42t, the jump between each cog will be noticeable on the road.
I’d go for modern Tiagra (way better than old 105), or even Sora, as the modern stuff have a much wider choice of gearing with 11-34t being the max.
With the Tiagra groupset, you can actually run 11-40t with a double if you opt for a long cage modern 105 R7000 with a Tiagra 4700.
1x is not that great on road bikes. Get newest Shimano 105 in 2x, it's way better than 10 speed
