There's a reason those "quick knife sharpeners" on QVC work so well. If you give most knives a couple of strokes on anything it'll improve it.
I always understood that should use a steel before and after every time you use your knife
A steel won’t sharpen the knife if it’s blunt. It just realigns the edge. So it is good discipline to use a steel frequently, but it won’t do much if the blade needs to be stone-sharpened.
