  • You could pour a half pint and very gradually add extract (maybe with a 1ml syringe) until it tastes good then extrapolate the amount for 25L?

  • This recipe that just appeared on my Instagram today suggests 50ml but doesn't have any coffee .

  • This years mead is going into this. (Bottle just for scale). White oak, medium toast, 20L. New barrel so I expect the first batch will be quite ‘grippy’ but subsequent batches should be about right. We’ll see!

  • Yeah, just remember a smaller barrel means more of the mead is in contact with the wood meaning it'll get oaked a lot more quickly. I've used a 20l oak barrel for beer and it only took a few weeks.

  • Yep. Ordered just before The Clown's speech (and all the bits I need for a two tap keggerator) but I suspect I won't be getting them for quite some time now.

    Luckily I'm doing Dry January and have plenty of bottles from previous brews to get me through February and March.

  • I did too last night, got an email to say it's on it's way this morning!

  • Bottling the 2019 blackberry wine. Very dry. Tasty.

  • Finally got around to bottling my 2nd batch of Plum/Damson wine the other day. It's really sweet, I think the fermentation stalled half way through, it does still taste like booze though and much more potent than the first, a bit like a sweet sherry or dessert wine.

  • Nice. I need to pay more attention during ferment or hope it stalls to try get a sweeter end result.

    My perry stopped around 1.006 so has a bit of sweetness. It also had a film forming but I think/hope I got it in time.

  • Also discovered bucket clip for autosyphon. Game changer for bottling, no more spills and swearing for lack of a 3rd arm!

  • I did 0 measuring before or after, so god knows how strong each batch is or isn't. Currently working on a small fermenting unit so I can be a bit more scientific with is next time.

    Going to try blending a bottle from each batch together when they're matured, my hope is that the qualities of each would be quite a nice balance.

  • Haha i bought some of these last month too - this should be the first thing mentioned in any homebrew book!
