Calibre 1861 didn’t go to the moon so it’s not like it’s the original model they’re replacing. The biggest change is the bracelet and I much prefer the look of the new one.

Yeah, and I think that's how most people will feel, though the 861/1861 were flown for years and coaxial is quite a big change. Seems they’ve managed to keep the flight certification which is pretty crucial.
The dial is the thing – it has the potential to be a good improvement over the current model if they get it right and make it look more like the vintage ones (supersized logo notwithstanding). I thought the current Moonwatch dial looked oddly flat and a bit "off". Couldn't quite put my finger on it.

Rolex (and patek) are not good examples for the rest. People even buy that hideous air king with the 5s because its price will go up eventually.
Omega then... NOS lines jump in price when the new lines come out.

Lets put it this way.
Omega is driving prices up.
everyone knows that when a new thing comes out the prices of the old thing drops (normally). BUT what really does is drives more interest to the older thing. More people looking, more interest then WATCH PEOPLE HAPPEN, price increase on the older thing.

I think 861 was recertified for the shuttle and 1861 is still used on the ISS

Yep and I'm sure the 3861 will be flown at some point if it retains the certification. It's a significantly better movement (assuming it achieves the same reliability & shock resistance).
They'll all use the X-33 in most situations because it tracks mission elapsed time and other important stuff but the Speedie is the one that gets used for EVA because quartz watches can't deal with the temperature drop.

Amazingly Rolex agreed to do the service without replacing the dial or hands but have made it clear that it will not be covered by warranty...which is fair enough. Took them three days to get back to me on that when I asked. I was under the impression that they did not do that sort of thing.

Edit: Just re-read my post and its misleading. They're not doing a full service, just sorting the bracelet out and regulating.

Annoying that they’re only using an applied Omega logo on the sapphire crystal version, would’ve been a nice touch on both releases.
I think the slimmer bracelet is a good move and harks back to some of the earlier ones, I’ve tried just about every leather combo on mine and still return to the bracelet, just feels complete. Saying that I’m still on an eternal 20mm strap buying mission cause you never know, the next one might change my mind :)

It says "diamond polished", I wonder if it's got that "compact disc rainbow stripe" effect that a lot of their newer stuff has. Would look really wrong on a Moonwatch IMO.
Quite nice to see that the new one is actually slightly thinner than the old one despite the coaxial escapement.

I like that it has solid end links, and the stretch. There are a few bracelet and end link combos that you can still order from an AD that fit the FOIS but they’re all hollow end links - authentic but on a modern watch I’m not a fan.

That Forstner bracelet looks better to me than the OEM version - I’m getting the strap model but I’ll probably add one of these. The stretch sounds excellent.

I think the OEM bracelets are better made, and certainly better finished, but for a lot of people the light and rattly style is more correct. :)
Are you getting a moonwatch or FOIS? There's a very useful post detailing all the possible Omega-made bracelet and end link combinations that will fit the FOIS here:

As you can see, the problem is usually the end links.

The current / outgoing moonwatch has solid endlinks but that polished shoulder thing is the only Omega game in town on the regular moonwatch I think. Fortunately the Forstner one can be ordered with either FOIS (19mm) or regular moonwatch (20mm) endlinks.
