Prise off the end cap with a knife, or thin screwdriver
Undo the nut that you'll find inside whilst holding the axle still with a spanner, or hold in a vice.
Undo the cone and be careful not to lose the ball bearings everywhere.
Remove pedal cage from axle.
Clean, regrease
Assembly is the reverse. -

But if you do step 3 inside a sandwich bag, you don't have to worry about losing stuff.

a wee magnet is always useful for pulling the balls out together.

Before I strip my traditional SR quill road pedals down, can someone please confirm whether the locknuts and cones turn anticlockwise to undo on both the left and right pedals?

The threads on the locknuts and cones of both pedals are conventional - righty tighty and lefty loosey!
