I'll let you know when I get a chance to use it... Had a new bed delivered today so I've been dismantling the old one and putting the new one together... Takeaway for dinner! The weight is lovely tho', it's such a beautiful object... Very easy to fetishize, like most Japanese stuff... 🤓

I have Classic and I think it's excellent. The ultimate looks good too. Given the price differences I think I'd stick with the classic.

i know its all individual as to how it feels in the hand, but you know when a knife feels lightweight and crappy. Looks lovely mind ya fingers :0

Fine? Laguiole. Bit pricey.
Robert Welch do a set for about ÂŁ85. We've had their kitchen knives for a decade and I do rate them.
Keep in mind it's cheese. You don't need razor sharpness. Lower cost options will work just as well.

The one I have spare is a No. 8 with a slightly crooked tip.
You can have it for some postage if you want to reshape/grind down?
Perfectly functional as it is though.

Japanese Nata as a Christmas gift - toying between the niwaki rope handled one or the Silky. Niwaki wins on appearances but doesn’t have a sheath that attaches to a belt, niwaki has a better sheath.
Any thoughts.

Its stainless.
The warp is only 3mm or so at the tip, so I was thinking of grinding it down to a different shape anyway. The tip is somewhat delicate, I can't remember how I bent it, probably using it for some DIY job that it was definitely not suited for.Been using it as box/letter opener.

The no. 8 is fairly easy to snap, I've broken a few over the years (I should really have learnt to be honest). I'm sure the oyster knife would be stronger.

I've not found that, but then I maybe a bit more precious with mine.
