I tend to use low opacity brushes to block areas and then start working in details. Art classes I had teach that as best approach.
And no problems with dirty colours on ePaint, with real paint you have to plan your palette carefully. We've all done the "aw shit I didn't want dirty grey / brown" in paint class.
The Loomis drawing books are excellent btw for teaching general art / anatomy.
