Depending on the scissors, you will probably need to work the whole of the flat side and the bevel side of the blade, then remove the burrs. Because of this your stones will need to be super flat, or use a large and high quality diamond stone.
I totally missed this reply, thanks! My stone is definitely not super flat. This might be the motivation I need to finally sort it out!
I’m a fan of those large DMT diamond plates you can get from Axminster. Not cheap, but they save a lot of time otherwise spent flattening.
