Because the official result for each State isn't made until December 14th which is when the electors in each State meet to vote. Even then their votes don't have to be in until January 6th.
Waiting until December 14th would be stupid, so the various media agencies call it early.
The individual candidates/parties "calling" anything is just distraction or grandstanding. It should be ignored.

I get the impression that 'call' has come to replace all varieties of the phrase 'declare the winner of', a one syllable word optimised for an era where you have character limits to tweets and headlines.
The sentence fragment "..., and the call stood" just hurts my brain.

Which were you thinking of?
Biggest ones I can think of are Brexit, various national lockdowns, the US killing that Iranian general, Kim in North Korea having a bad surgery, those kids trapped in a Thai cave... and they all seem to pale in comparison.

I can't remember the details but I remember that I read Trump was planning to launch Trump TV immediately after he lost the 2016 election. Obviously that didn't go to plan.
