The less space the better if you're worried about falling, have something to stop you before you build up any sideways momentum. In reality, if you can ride a bike in a straight line, you'll never come off the rollers. You can add a little trail so your bike will be even more stable than it is on the road.
It's an aluminium Vitus but I hadn't thought about damage from sweat. Having seen the video demonstration of roller crashes I think I'm either back to cycling the streets for exercise or looking at the fixed trainers. I don't have enough safe space to be falling over in.
