Iād like to treat myself to a Carradice saddlebag for this build. Would need to be easily removed and waterproof. There are so many variations though!
Can anyone suggest which combo might would fit the bill and look pretty too??

I think the only actually waterproof are the carradry ones. But they look awful.
I would buy a duck cotton one, and if you needed anything inside it absolutely dry (the duck cotton is pretty good) then put it in a waterproof stuff sack. then the only variable is the size.

If you want to go full retro you get the Carradice barley and put up with the buckles.
I prefer the super c audax because it has plastic quick release buckles.
You'll need a bagman or sqr mount for quick removal. I prefer the bagman.

I'm in the SQR block camp. It's very handy and you can have your bag a little lower. It's also stable without the need for struts.

After much consideration I went for a dark green Barley and an SQR support. Thanks for advice.

It looks like you have only about an inch of round seat post showing before it narrows and changes in cross-section. Will the SQR saddlebag mounting block fit the exposed seatpost area?

Did you purposefully got a size bigger to get that ā*too big a bike*ā look of the 1950ās cyclist??
After buying @Phil221985 's Jackson frame a couple of months ago, I've been building it up as my commute bike. Finished today and am really pleased with it. Not exactly race-winning, but really comfortable. I'm surprised that it fits me as well as it does (BJ 23" off-the-peg frame, and I'm 5'11").
Used a mixture of SRAM Red/Force and Shimano Ultegra with some new Stronglight chainrings and the wheels that came with the frame (Ultegra front, Hope Ti rear) on Open Pros.
Just needs a silver BB cap to finish it off and a new saddle...
