42T has me removing 1 link from a 118 chain so, yeah, what do MTBers use for their silly 50+ cassettes? I guess they're running smaller front rings but still are there longer chains?

32:46 fits in a 114 link chain on my 29" full sus bike.

32t chainring and 50t cassette. Same chain length as 50t chainring, 32t cassette?
Longer chainstays tho...

For a 1x42/11-46 I need a whole length of 118 links, and still I got the feeling it's 1 link too short

You can definitely go up to 46 with a Wolftooth imho, happy to lend you mine if you want to give it a go. That gear ratio would be orrible for anything but Badlands though.
Also, consider the length of the chain needed for that gear range
