If I'm making an aubergine curry and forgot to fry them for long enough before adding the wet stuff, how long should I cook the whole lot for to get the aubergines nicely cooked?
If you put the lot in a slow cooker /cast iron pot at low heat for a few hours it should be fine IMHO.
As an aside if you are short of time and want to cook aubergines quickly (and not involve litres of oil) 5 minutes in the microwave will soften the flesh and prepare it for a light fry.
