makes literally no difference how much water you use
Wrong. It matters. The reduction/steam method is really the only way to cook Basmati. Long grain yeah, whack that in a large pan of boiling water. Different beast though.

My better half agrees with you. We resolved it by asking our local curry house. They boil and strain.
