Both are good in different ways, going from London I'd say the best bits are the first half of the West strand and the second half of the East one, maybe you can join them up some way (that'd be the second and fourth quarter of the whole loop). If I was to recommend one I'd probably say the East strand.
Also, the West strand has a significant part of Stayer #3 route in it if you have ridden it before. The East strand goes through Epping which you know well already.

This is also a good route if you want a big day out without going all the way to Cambridge, much of the route is the same from memory.

Rode the route above yesterday and it's insanely good, highly recommended. Two rerouting spots and a long-ish segment on road to break down, already changed in the route linked above, but really smooth aside from that. The Roman road to Cambridge is beautiful.
