Pedals are a incredibly important contact point! I’d say go with some quality well reviewed ones, even better if you can try some out. Even if it’s just a spin around a car park before a ride.
Do you have any friends who have any you could try?
After trying a guy I ride with pair of Nukeproof Horizons, you’re I went for these. Since trying mine a couple of other riding mate have switched to them too.
I’m not saying they’re better than any of the others; I’m sure Burgtech and many other pedals are very good.

If you're settled on the 35mm rims, don't bother going for anything narrower than 2.5
The Rekon 2.6 would be a good shout, as Minions are overkill for most things

With the exception of the Ardent, everything else there is pretty much a DH tyre, and will be an awful slog a lot of the time. The Rekons have a decent tread on them without being sketchy XC tyres
Ime, beginner mountain bikers get a bit more confidence from fatter tyres too, and 2.6 is a good width, before things start to get heavy or delicate

Rear shock was sent off to have the tune determined (light compression tune found, for those interested), and said tune applied to a Super Deluxe Ultimate shock. Fork was sent off with it for a service, as Fin of Full Factory Suspension said that he services every Rock Shox item he sells before he sends it out as their QA is, sadly, rather too variable.
At the same time we were waiting for the replacement MT7 lever to arrive, to enable the rear brake to be installed and the Zee removed, the lever arrived on Monday IIRC so hopefully the bike now has two fully operational Magura brakes.
I was surprised at how much more powerful the Magura was than the Zee, both being four piston designs running on the same diameter disc.
