They're 0k-can be a bit watery. You really need to roast them then mix them with a bit of ground nutmeg or something if you're stuffing pasta with them, (I did this last year), or for risotto try this: https://vegeyum.wordpress.com/2007/12/18/roastpumpkin/ for risotto-else they can be a bit bland I found.
