By south you mean south of birmingham/leicester? or London?
Suffolk? Or between Northampton - MK and Bedford? Those places aren't particularly brilliant but there is some nice countryside around them
Maybe rather than not Tory, not Brexity would be a good criteria?

South of England really, anywhere south of Birmingham would probably be fine but probably not much further east than Cambridge.
During lockdown we met up with my parents for day trips in some areas I'd never been to before to walk around. A couple of places near Daventry and then Rutland Water. There was some really nice countryside, but maybe nlt much exciting stuff happening nearby.
My wife is less and less sure that we should be living in London. Where should we thinking about moving to which:
Villages or small towns near Bristol seem to be leading contenders at the minute, but I don't really know any.
