i'm assuming this doesn't have routing options for a dynamo wire?

It has internal routing for the hydro line - could possibly shrink wrap the two together - no idea what the dia. of a Dynamo cable is vs diameter of hydro line vs diameter of the internal routing etc

How much is there to play with on the steerer?

250mm:
enough for 200mm of head tube, 10mm of external headset lower cup 5mm of headset bearing cap and 40mm of stem, or any other permutation thereof (considering +5mm of lip on steerer tube bung) -

For context - it would fit a 58/60cm Frame with a 185cm head tube with room for a few spacers
A chris King inset 8 headset has a lower external stack height of 14mm and an upper of (8.2) 9mm so if you used that headset on this fork with an ENVE stem, which has a stack height of about 43mm and a steerer tube bung with a stack height of 3mm, your frame could have a 180mm head tube and you’d still have 7mm of spacers on the steerer.....
.....if that makes sense
