  • Apologies for repeated photos of shepherd's pie, but I'm feeling smug about the range of produce we're now getting from a modest allotment plot. :)

    Allotment ingredients: potatoes (King Edwards), carrot (just the one!), purple and green kale, courgette, parsley.
    Non-allotment ingredients: veggie mince, mushrooms, peas, onion, tomatoes (tin), ketchup, soy sauce, mustard, oil, etc.

  • I made this tofu and walnut "taco meat" tonight and it was really good! (Photo stolen from recipe site, ours didn't come out anywhere near as photogenic). I ended up needing to make about twice as much of the sauce as suggested to coat it all. If I made it again I'd definitely add more spices and probably some red onion and garlic.
    It went well with the spicy, garlicky black beans and guacamole we made.

  • I linked it, you have to get through the customary 5000 word essay and 50+ adverts to get to it though! Here it is copied and pasted.

    2 cups (200g) Walnuts
    16oz (450g) Extra Firm Tofu
    1 tsp Onion Powder
    1 tsp Garlic Powder
    1/2 tsp Cumin
    1/2 tsp Smoked Paprika
    1 tsp Oregano
    1/4 tsp Cayenne Pepper
    1 Tbsp Nutritional Yeast
    1 Tbsp Olive Oil
    2 Tbsp Dark Soy Sauce*
    1 Tbsp Maple Syrup
    2 Tbsp Tomato Paste

    Preheat the oven to 350°F (180°C).

    Add walnuts to the food processor and process into crumbles. Mash the tofu with a fork.

    Add the crushed walnuts and tofu pieces to a dish.

    Add the garlic powder, onion powder, cumin, smoked paprika, oregano, cayenne pepper, nutritional yeast, olive oil, soy sauce, maple syrup and tomato paste to a jug and whisk into a thick sauce.

    Mix the sauce in with the tofu and walnut crumbles and mix in until everything is coated in the sauce.

    Transfer to a parchment lined baking tray and spread out evenly across the tray.
    Bake in the oven for 35 minutes, bring it out at the 15 minute mark and give it a stir and then put it back in.

    Serve in tacos with shredded lettuce, salsa, guacamole and vegan sour cream.

  • FYI: Oatly is winning for drinks, the coconut milk separates and is too flavoured for drinks but works well in our Pina Colada bircher. Haven't got hold of any of the weirder options, other than a lacto-free proper milk which just tastes like milk (sorry, not Vegan). Stopped the greek yoghurt and have a coconut version of that but getting sick of coconut flavoured shit to be honest.

  • Aldi do predictably cheap soya milk and yoghurts (plain, vanilla, blueberry). The vanilla yoghurt is my go-to dessert, with a handful of equally bargainous Aldi fruit 'n nut or trail mix.

    Preach. Oatly Greek style yoghurt is my new fake-gurt go to. All the coconut based ones are too much of a coconut flavour so not quite as versatile for cooking etc.

  • I was about to inform about the oatly Greek style. Totally agree on the coconut flavor, coconut flavored fake cheeses are the worst.

  • Interesting how tastes are different. I really enjoy the Koko ‘deliciously mellow' as a cheese alternative. I don’t find the coconut flavour to be that strong, and it’s got a great texture, almost like a soft crumbly Cheshire.

  • 1st awkward vegan experience this week . nothing bad just slightly awkward moment.
    I went to a birthday of my sister in law the food was great as they ordered a take away that had some good vegan options, the awkwardness came the birthday cake. the daughter of the birthday girl had made a special vegan cake so we could all enjoy and it was really nice..the Husband of the birthday girl refused to eat any because it wasn't a proper cake, at first i thought he was just taking he piss having a laugh but he flat refused to try any and you could tell he was annoyed and having a strop . He was put out because he wasn't getting a normal cake :(
    i know he was being silly and its his problem but it felt because of my diet requirements i had caused the problem. It was the 1st time being vegan became a "thing" but it was all fine after the daughter called him a moany old gammon and threw a raspberry at him.

  • More and more people who are not vegans are going eat vegan meals, snacks, desserts, etc. and eventually they will enjoy at least some of them, thus realizing that - vegan or not vegan - it was tasty. Really think this transition is happening quite fast now.
