What are the current go-to 25mm option for winter training tyres? Also to be used for commuting with a rear rack.

I'm about 65 kg if that makes a difference.
IME race tyres are grippy and training tyres are (sometimes) puncture proof.
If you’re not already, you can get better wet grip by finding your lowest safe pressure. Something like a Durano is a decent training tyre in 25mm.
