I’ve got a Cotic Roadrat with a 1x9 setup and Avid 7s mechanical disc brakes, which a friend rode to Munich on? Perfect for touring, can carry loads of gear, if needed. Spec can be adjusted as per preference and/or budget, I’m in West London and happy for test rides etc
