For maximum elevation round here you can't really beat Toys of Ide. I'd prefer Ide as it's a more even and less sapping gradient. Good village shop turn-around at the top and pretty quiet at the bottom.
I really like Birling Hill, nice even gradient and quiet. 1.3km @ 8% for 108m
If you want steeper Butts Lane could be good, 1km @ 13% for 133m. It's a road to nowhere so quiet, at least during the week. It does have a kick at the end though so might be demoralising on the 6th time. You could always turn around before the top if you don't feel up to the last 20m of climbing. Think there's a direct train from London.
Something inbetween would be Firle Bostal - 1.27km @ 10% for 125m. Bit of a warmup to start, easier in the middle, last 400m at 12%. Could be good, never gets punishingly steep. If the wind is going south you're laughing. Direct train to Lewes then a short nice ride past Glyndebourne opera house. Also a road to nowhere / ok turns.
