That could still be some kind of sensor fault.
The stability control works by monitoring several parameters (wheel speed, brake pedal pressure, throttle position, steering angle etc.) and can apply the brakes to control the vehicle. So a faulty sensor can cause behavior similar to what you are reporting.
Interestingly on the way back home I managed to barely use my brakes (to the annoyance of those behind as I was travelling slower) as an experiment. The light didn’t come on at all so my hypothesis is that it’s something to do with the rear disc/brake/calliper and under heavier use something is triggering the faults.
