  • I have these pretty regularly, usually in a stir-fry or curry, they're good! I usually soak them in v hot water for a bit, before squeezing most of the water out, then throwing in the curry/fry. Since they soak up the fluid nicely I'd imagine they work well marinated but I've not experimented much.

  • Nice, will give them a go! Are there any brands you'd recommend or are they all pretty similar?

  • I've had them from the international aisle in morissons and from holland and barrett, never noticed a difference. They do take a bit of trial and error to get right ime - they can be a bit spongey and strange if you don't manage to strain them enough. It's not hard though so don't let that put you off.

  • Ha ha, I wondered how long it'd be until someone mentioned that in here. I know a few people in that boat, bending over backwards to justify eating meat when they clearly know they shouldn't be doing it.

  • I had some of that a while ago and wasn't too impressed! It was pretty similar to any other underwhelming/cardboardy vegan bacon I've had but in a fancier packet with an inflated price tag. Thinly sliced tempeh in light soy sauce and smoked paprika is my go to bacon alternative.

  • I think the toughness/cardboard nature was why I liked it so much!

    I rode past it last night. I was expecting that they would already have drained the fountains, but they hadn't. Looked unsettling.

  • Oh sure, but read back in the forum archives and you'll see that things have improved immensely. At first, most of the forum was openly hostile to veganism and there were very few vegans on here. This thread is now bouncing most of the time and loads of people are still turning vegan.

    The other thread has also just turned better because ohheyitsdrew and edmundro posted there.

    People need information so that they can develop moral motivation (to act on) and moral reasons. If they don't have the motivation, they won't act, and if they don't have the reasons they won't be consistent and stick with their decisions. It takes time for everyone. Obviously, we can help. :)

  • Bored this evening so decided to make some peanut butter cookies that turned out ok. Mix was a bit crumbly so struggled to keep it together when I put them into the tray but tasty so who cares really

  • Fish sauce. I love Thai food and vietnamese food but and with my turn to go vegan I've been looking for a fish sauce replacement. The ready made bottles here are expensive and I've tried a recipe but it lacked the punch. Has anyone developed an add on recipe.

    I tried this one.( Of course it could have been my poor cooking skills that caused it not to be great)

  • This likely isn't the answer you were looking for, but in my humble opinion fish sauce is just one of those things where it isn't worth the faffing around trying to replicate / veganize it, as it's super-hard / impossible to archieve a satisfying end result.
    Just eat other things.

  • I've found seaweed & miso is a good replacement in recipes

  • cheers ill experiment a bit with seaweeds and miso and some other bits.

  • I just found this in Earth, Kentish Town. Expensive, as you say. But I'll report back on taste

    The author uses it as a replacement for fish sauce in her veggie / vegan recipes.

  • I once came across a recipe that was good but I can't for the life of me remember where it was now.

    Basically involved julienning a shit ton of mixed veg and roasting it for hours with nori and shiitake. You have to roast it until all the moisture has evaporated and the veg is completely dark in colour, turning it as you go. Then you add it all to a pot with water and boil for another few hours. Took forever, tasted incredible. You can leave out the nori if you want more of a stock and then you can reduce that stock for a gravy.

    I've been quietly vegan for the past year. Quiet in the sense that I've not really told anyone unless it was to stop them serving me meat/dairy or if they notice my lack of animal product consumption.

    I've been a chef for 13 years and I can honestly say I don't think I've ever been as excited about cooking as I was the first time I stepped into a professional kitchen. Not to mention the fact that I feel amazing on my current diet.

    Looking forward to contributing to this thread and , of course, happy to help with any general cooking questions people may have :)
