  • Fish sauce. I love Thai food and vietnamese food but and with my turn to go vegan I've been looking for a fish sauce replacement. The ready made bottles here are expensive and I've tried a recipe but it lacked the punch. Has anyone developed an add on recipe.

    I tried this one.( Of course it could have been my poor cooking skills that caused it not to be great)

  • This likely isn't the answer you were looking for, but in my humble opinion fish sauce is just one of those things where it isn't worth the faffing around trying to replicate / veganize it, as it's super-hard / impossible to archieve a satisfying end result.
    Just eat other things.

  • I once came across a recipe that was good but I can't for the life of me remember where it was now.

    Basically involved julienning a shit ton of mixed veg and roasting it for hours with nori and shiitake. You have to roast it until all the moisture has evaporated and the veg is completely dark in colour, turning it as you go. Then you add it all to a pot with water and boil for another few hours. Took forever, tasted incredible. You can leave out the nori if you want more of a stock and then you can reduce that stock for a gravy.
