You may know this already but my experience of putting speakers in a DIY camper was that making sure they're boxed well matters as much as anything - which I found harder than expected due to the layout of the van (and the fact it was small).
I went down the classic car stereo route with a head unit w mosfet amp and 6 x 9s

15w is nothing in a car/van. You don’t need to go crazy but you need at least 4x25w and two pairs of speakers, so I’d go for the latter. I run a fairly powerful setup in my van with 2 ohm, 10”’dual coil subs but the challenges are the same whatever you do. Expect lots of reflection and room modes which you’ll need to dial out, and invest heavily in sound deadening for the panels. Crossovers seem to be much more important than at home. As is bass :)
