That looks lovely and proper dialled! I got the original time stem as well but unfortunately it's too long for me :( I don't mind the hijacking, on the contrary it's nice to see this thread turn into a post-your-young'time'r-thread.
As for the new wheelset, I just purchased these:
I wanted some reasonably light handbuilt wheels with aluminium clinchers. I thought about buying a set with tune hubs but the freehubs on those appear to be prone to cracking so I didn't want to buy them used. So given the reasonable sale price and the value of the hubs + the fact that the wheelset checks all my boxes, I successfully convinced myself that these are in fact a somewhat rational purchase.
Been following your thread and that's a lovely bike. Without hijacking your build here's my VX Edge. Currently running Chorus 11 but planning on switching out for Super Record from another build at some point.
I bought this bike new in 2004 with Record 10 and Ksyrium ES wheels. Sold it in 2015 to fund a Canyon. It then popped back up for sale again on ebay in 2018 and so I bought it back. Stripped off the mix of chorus/record 10 speed and added the Chorus 11 and the Cosmic wheels.
Unfortunately the original seat post was damaged when I bought it back so I have replaced with a Fizik carbon.
