If I remember, I made a large batch of sticky rice (thai/sushi) in the rice cooker, mixed it up with some toasted sesame oil, sesame seeds and rice syrup(or golden syrup), put a layer in a baking dish lined with clingfilm, pressed it down, decent layer of warm peanut butter, then topped with the remaining rice mix, pressed it down. Cool it down, fridge, cut into large wedges.
I think at the time I thought adding cream cheese to the mix wasn't great if you're lactose intolerant, so added other binding foods like rice syrup and peanut butter.
